Cookie (no-bake) recipe and other fun things to make and eat



NO-BAKE OATMEAL COOKIES

Ingredients:
2 cups sugar
1/4 c. unsweetened cocoa powder
1/2 cup milk

1/2 c. butter
1 tsp. vanilla extract
1 pinch of salt
1/2 c. chunky peanut butter
3 c. quick cooking oats


Directions:

In saucepan over medium heat, combine the cocoa, sugar, milk, and butter.  Bring to a boil, stirring occasionally.  Boil for 1 minute.  Remove from heat and stir in the salt, vanilla, oats and peanut butter.  Drop by rounded spoonfuls onto waxed paper.  Allow cookies to cool for at least 1 hour.

COBBLER
Frozen berries, dry cake mix, and 1 can of sprite. yummy cobbler. It sounds so easy - and it is good and weight watcher friendly! Ingredients
Two 12-oz bags frozen mixed berries
1 box white cake mix (no pudding)
1 can of diet 7-up or sierra mist (clear soda)
Instructions
Place frozen fruit in a 9x13 baking dish. Add dry cake mix over the top. Pour soda slowly over cake mix. DO NOT stir the cake mix and the pop - this will give you a 'crust'. If you stir the two, you will have a cake like topping.
Bake 350 for 45-50 min.
You may be able to use frozen peaches instead of mixed berries.
Serves 16

 4 cups mini-marshmallows 1 chocolate cake mix, 1 can cherry pie filling, 1 large container of Cool Whip Method: Pour four cups of mini-marshmallows into a greased 9x13 inch cake pan. Prepare chocolate cake mix according to directions on package. Pour over marshmallows. Spoon cherry pie filling evenly over cake. Bake at 350 degrees F for about 50 minutes...or until toothpick inserted comes out clean. COOL~ Top with Cool Whip. Serves 15. (try peach or strawberry pie filling with vanilla cake mix, or apple pie filling with spiced or carrot cake mix.....)

Ingredients
Large Marshmallows, cut horizontally
Bunny Peeps®
Mini pretzels
Cream-Filled Cakes (e.g. Little Debbie® Cloud Cakes™)
Decorator Icing
Frosting
Sprinkles

Instructions
Cut a small rectangle out of the top of the cream-filled cake about a third of the way back from the “front” of the car. Use the white decorator icing to adhere the bunny Peep®, mini pretzel “steering wheel” and large marshmallows in place. Use frosting and sprinkles to decorate your car. Allow to set.


Easter Bunny Race Cars

Ingredients
Large Marshmallows, cut horizontally

Mini pretzels

STRAWBERRY PUNCH

Ingredients:
1 can (46 ounces) pineapple juice, chilled
2-1/4 cups water
3/4 cup thawed pink lemonade concentrate
3/4 cup sugar
1 quart strawberry ice cream
2-1/2 quarts ginger ale, chilled
1 Pint Fresh Strawberries

Directions:
In a punch bowl, combine the first four ingredients.
Add ice cream; stir gently.
Add ginger ale; stir gently.
Cut Fresh Strawberries and add to punch.
Serve immediately. Yield: 6 quarts.
Nutritional Facts
1 serving (1/2 cup) equals 74 calories, 1 g fat (1 g saturated fat), 3 mg cholesterol, 11 mg sodium, 16 g carbohydrate, trace fiber, trace protein.

Recipes (Pasty and Apple Cinnamon Bread)

Here are two recipes for you:

PASTIES FOR 6 RECIPE

CRUST:
1 cup lard---but Crisco will work
3 cups flour
1 tsp. salt
1 cup very cold water

Mix the shortening,salt and flour together until it looks about pea size with a pastry blender if you have one, or just cut with 2 knives crisscrossed. Add the cold water and mix just until it all sticks together ---don't overwork it or your crust will be tough. Refrigerate it while you do your filling. This is enough to make a 13x9 pan pasty pie -or 6-7 pasties. If you want more make a separate batch--don't double it. Take about a tennis ball sized piece of your dough and roll it out on a counter dusted with flour. Turn it and roll some more. I use an 8" salad plate and lay my crust on it and then place the filling on half, top filling with a pat of butter. Use a little water on your fingers on the bottom half of the edge of the crust then flip the top half over and press it down, the water will make the top half stick to the bottom. Cut off any excess crust hanging over your plate. and flute the edge. Make a small vent hole in your tops. Brush the tops of your pasties with some milk --it make your crust brown better.

FILLING:
1 1/2 lbs.pasty meat (about) SEE NOTE BELOW
4-5 diced potatoes
1 small diced rutabaga
1 small diced onion
diced carrots--Yoopers disagree about the carrots but you decide
salt
pepper
Mix all your filling together add your salt and pepper to taste.

Bake these for 1hr 15 min on 375----I will test one to see if the rutabagas are done because they take the longest to cook and the smaller you cut them the quicker they will cook..so good luck.
NOTE: Pasty meat is typically 3/4 coarse ground beef to 1/4 coarse ground pork, but I've seen finely diced steak as well as venison used too.

APPLE CINNAMON BREAD


1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and chopped

Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract.
Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter.
Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

Honey/Applesauce Banana Bread

Here's a new recipe:

Banana Bread with honey and applesauce instead of sugar & oil. Delicious & Healthy.
Ingredients
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar free applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas


Directions:

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Easy to Make Sock Snowman

How cute is this easy-to-make snowman??

For this craft, you'll need a pair of old socks that are crew length, or longer, rice, rubber bands, map pins with heads, buttons, any left over fabric if you want for a scarf. First, cut off the top of the sock from the foot. Turn the sock inside out and attach a rubber band tightly to the top of the sock. Then turn the sock right-side out again. Fill the sock with rice. Make sure to pack it down as you go so the sock gets a nice round base. Rubber band the top of the sock closed and put another rubber band 3/4 of the way to the top for the head of your snowman. Now, decorate! Tie a scarf around your snowman's neck and add eyes, nose, and buttons. Use the toe of your cut socks to fashion a stocking cap. Or you could use colored argyle socks to create hats and sweaters for your snowman. You can either sew or glue on your buttons, and add embellishments - twine, bows, ribbons, etc - as needed. This is such a quick and easy craft - 10 minutes tops - that it would be simple to create a whole family of snowmen for your mantle!

Allan Kesick book

A quick note to tell LTBB membership that a Tribal member and elder, Allan Kesick, has a new book out.  It's combination of autobiography and spiritual beliefs and is over 200 pages.  It's a well-written book whose main themes are to rely on God and DON'T GIVE UP!; the book also has a gorgeous cover.  Title of the book:  "Believe."  This book is available at lulu.com, the publisher.  It's available in pocket-book size ("hard" copy/cover) and digital.  To find the book at lulu.com, just type in Believe Allan Kesick and that will bring you right to the page where his book is located.  It also shows you how much the book will cost, for both digital and hard copy/cover.  Enjoy the book!!
Here are a couple recipes for you to try:

Apple Cider Donuts
Makes 10 to 12 donuts, plus donut holes
1 cup apple cider
2 3/4 cups cake flour
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon freshly grated nutmeg
2/3 cup sugar
2 tablespoons non-hydrogenated shortening (or lard, if you have it)
1 egg plus one egg yolk
1/3 cup buttermilk
2 1/4-inch and 1 1/4-inch round cookie cutters
Canola oil, for frying
1/2 cup sugar, for topping
2 teaspoons ground cinnamon, for topping
First, boil and reduce your apple cider until it reduces to 1/3 cup, and then set it aside to cool while you prepare the rest of the ingredients.
Sift your dry ingredients, and cream your shortening and sugar together. Add in the egg and egg yolk and mix on high (with a handheld mixer or stand mixer) until light and thickened, about 5 minutes.

 Combine the reduced apple cider and buttermilk. Then alternate adding the flour mixture and the milk mixture to your stand (or handheld) mixer, until just combined. The dough will be soft and sticky, much like cookie dough.

Transfer the mixture to a clean bowl and cover with plastic wrap. Refrigerate the dough for at least one hour or overnight.
 When you are ready to roll and fry the donuts, heat a large pot or dutch oven with at least 2 inches of oil over medium heat until the oil reaches 370° F on a candy thermometer. On a generously floured board or piece of parchment paper, gently roll the chilled dough into a circle about 1/2-inch thick and about 8 inches wide.

Cut as many donuts and holes as possible, making sure to flour the cutters before each cut. Gently re-roll the scraps and cut more holes. If at any time the dough becomes too soft to handle, just put it in the refrigerator for a few minutes.

Place the cut donuts on a parchment-lined baking sheet and refrigerate for 15 minutes, until they are slightly firm and easier to handle. While the donuts are chilling, stir together the cinnamon and sugar for the topping in a shallow, wide bowl.

Brush off any excess flour and fry the donuts for about 1 minute per side, being careful not to crowd the pan.

When the donuts are deep golden brown on each side, remove them from the oil, gently blot off excess oil, and toss immediately in the cinnamon sugar. They'll make you excited about the season even if you don't have a field to walk through.

37 CALORIES BROWNIES
3/4 cup nonfat Greek yogurt (I used vanilla)
1/4 cup skim milk
1/2 cup Cocoa powder
1/2 cup Old fashioned rolled oats (like Quaker)
1/2 cup Truvia (or any natural/stevia based sweetener that pours like sugar)
1 egg
1/3 cup applesauce
1 teaspoon baking powder
1 pinch salt

Preheat the oven to 400°F. Grease a square baking dish (I used 8"x8"). Combine all ingredients into a food processor or a blender, and blend until smooth (about 1 minute). Pour into the prepared dish and bake for about 15 minutes. Allow to cool completely before cutting into 9 large squares.
